Sizzler makes a triumphant return: Australia’s beloved chain set for a fresh chapter

Sizzler is headed back to Australia, reviving a familiar name after a six-year hiatus Down Under.

The Minor Hotel group plans to debut the all-you-can-eat concept at its upcoming NH Collection Hotel near Sydney airport in the coming months. Minor’s founder and chairman, Bill Heinecke, confirmed the milestone and signaled ambitions to roll the brand out across the country.

“We’re pursuing several exciting Australian projects, including the 90-room NH Collection hotel at 102-106 Robey Street in Mascot and an Avani property in Wollongong, with potential branded residences in the mix,” Heinecke told reporters. “Sizzler can operate within hotels or as standalone venues, depending on opportunities.”

Sizzler first launched in Culver City, California in 1958, founded by Del and Helen Johnson. It quickly captured diners’ hearts with value-for-money meals, notably a steak dinner offered for just 99 cents, establishing the chain as a reliable, affordable option without sacrificing flavor.

The iconic Sizzler menu and concept are poised for a comeback.

Historically, Sizzler’s strategy, as described by former company president Chris Perkins, was to capitalize on the rapid expansion model popularized by McDonald’s and later In-N-Out - a fast-casual approach that sits between quick service and full-service dining. This model, featuring counter ordering with prompt table delivery, helped keep prices accessible while delivering quality fare.

“Del Johnson recognized a gap in the market—the choice between a standard burger joint and a full-service diner. He created a middle ground that preserved low prices while offering a sit-down experience,” Perkins explained to SFGATE.

Sizzler expanded into Australia in 1985, inaugurating its first location in Annerley, Brisbane. By 1992, the chain had grown to 74 outlets nationwide, reaching the peak of its Australian popularity.

Even as other fast-food giants like KFC, Pizza Hut, and McDonald’s expanded, Sizzler distinguished itself with a steadfast service-value-quality balance. As Perkins observed in 1992, the era’s consumers wanted more for less, and Sizzler’s approach resonated with that demand.

Kevin Perkins, former non-executive Chair of Sizzler USA Acquisition, noted in 1997 that the brand’s appeal lay in offering value without compromising on experience.

However, in the early 2010s the chain faced headwinds, leading to store closures. By 2017, only 17 locations remained, mostly in Queensland.

The Australian arm finally shut down entirely in November 2020, a casualty of the pandemic’s disruption to the hospitality sector. Since then, many former sites have been repurposed into daycare centers, libraries, or warehouses, while some properties sit vacant.

In a nod to Sizzler’s enduring nostalgia, Brisbane radio hosts Robin Bailey and Kip Wightman staged a one-night Sizzler pop-up in 2024 at the Coffee Club on Charlotte Street, rekindling memories for longtime fans.
